Looking for some comfort food in your recipe list for fall and winter?
No worries! I tried this easy recipe, and it is bursting with so much flavor! I used leftover smoked turkey. Because my little one and I are a family of 2, we had some leftover smoked turkey meat.
I pondered what I could do with the rest, besides trash it. So I thought it would probably taste amazing with white beans!
Well, here is my recipe - you'd be thankful you didn't trash your smoked turkey either.
(I would also recommend using regular turkey as well, it won't have the smoked taste, but will have the roasted taste.)

Ingredients:
Smoked Turkey (this recipe was 2 parts, a leg and wing, but you can use two legs, two wings, or turkey pieces.)
1 Onion Diced
2 Cans of White Beans
1 Can chicken broth
1 Bouillon cube
1/2 cup of water
1 Crock pot
Directions:
Take 1 onion, dice and put into crock pot
Open the cans of white beans and add to pot (if you wish to pour out the top bean juice you can before adding to crock pot)
Pour 1 can of chicken broth into the crock pot
Place the turkey meat into the crock pot
Place 1 bouillon cube into the crock pot
Pour 1/2 cup of water and stir mixture gently
Place lid on crock pot, turn on high for 4 1/2 hours
After 4 1/2 hours, mix soup again, take out bones if you wish
This recipe makes about 5 bowls of soup. Add cornbread or cornbread muffins for more filling dish!
